Executive Chef: Mickaël Cazemayor (France, Maître Rotisseur)
Born in France, Mickaël dedicated his life to the culinary arts when he became a student at the CFA de St-Cyr-sur-Loire, and later became an apprentice at the legendary George Sand, a three-star hotel and restaurant. He finished his time at George Sand with a one-year pastry apprenticeship before immigrating to Canada in 2001 and landing at Manitoba Club.

Executive Sous Chef: David Lawless (Canada)
David Lawless is proof that Winnipeg is a secretive storehouse of international-calibre culinary talent. Another individual who dedicated his life to the culinary arts at a very young age, David worked as the Sous Chef at Breezy Bend Country Club and also worked at St. Charles Country Club and the Fort Garry Hotel before joining the Manitoba Club brigade in 2008.

Pastry Chef: Éric Bari (France)
Éric Bari was born in Alsace, France. In 1984, he started an apprenticeship of pastry at CFA of Besançon. In the years to follow, Éric worked in bakeries in Alsace and Switzerland with one year as a pastry teacher at Vatel Culinary Institute in Nimes. In 1994, he opened his own pastry shop in Winnipeg, Canada and later worked for highly regarded establishments such as Hecla Resort and McNally Robinson (where he started their bakery department). Manitoba Club is proud to have Éric Bari as our Pastry Chef as he has delighted our members and their guests for well over a decade.

Sommelier: Domer Rafael, ISG (Canada, Maître Restauranteur)
Domer Rafael has dedicated his career to the service industry with a focus on guest experience, fine wine and management. After graduating from the prestigious International Sommelier Guild Program in 2010, Domer returned to Manitoba Club (2017) as Sommelier and as Food and Beverage Manager. Controlling a wine cellar and private wine program of over 500 wines and through his passion for the World's restaurant scene, Domer brings members options to pair fine food and wine in new ways.

Fort Garry Gate Dining Room (Members & Their Invited Guests Only)

The Fort Garry Gate Dining Room is aptly named for its incredible views of Upper Fort Garry Gate Provincial Park. This room represents the club's premier fine dining venue and showcases the culinary talents of Executive Chef Cazemayor and his brigade. Guests may begin their evening seated comfortably in the Fireside Lounge or Manitoba Lounge for pre-dinner cocktail and hors d'oeuvre service before being escorted to the dining room where seasonal and nightly chef features await.

A higher standard of dress is expected in the Fort Garry Gate Dining Room. Within this space, denim does not meet the criteria of expected dress. Members and guests are expected to be attired in business dress, with ties for the gentlemen being optional. During evening dinner service, gentlemen are required to wear jackets. The wearing of hats is not permitted within this area.
